moulin bean and onion tart
Often served as a starter.
1 large onion
125 g grated cheese
1 teaspoon mustard powder
150 ml milk
125 g cannellini beans, soaked, cooked and drained or a 425g tin of haricot jeune
1 tbsp chopped parsley
Preheat oven to Gas Mark 6, 190°C
Line a flan dish with the pastry base, prick and bake in the oven until golden (about 15 mins).
Chop onion and fry in olive oil for about 10 mins until soft.
Mix together cheese and mustard.
Beat the egg and mix with the milk, season with salt and pepper.
Put the hot onion straight onto the cooked pastry base, arrange the beans on top and then the grated cheese and mustard mixture, pour over the egg and milk.
Sprinkle with chopped parsley and bake for 40-50 mins until golden brown and set.
Serve hot or cold.
